Olive Chicken

Today I have a yummy chicken recipe for you. My sister-in-law fixed it one of the first times we visited them. She’s a very good cook. I loved it and she gladly shared the recipe. I’m not sure I would’ve ever tried it from only reading the recipe. It would’ve sounded like a lot of work to me and I would’ve questioned whether my man would like the gravy. It does take a little prep time, but not as much as just reading the recipe sounds. And we think it’s delicious! And I enjoy making it!

Olive Chicken

Cook Time: 1 hour

Serving Size: 8-10 servings

Ingredients

Combine:

1 cup flour

1 T. salt

1/2 tsp. pepper

1/2 tsp. paprika

1 T. accent

1 tsp. parsley

1 tsp. thyme

1/2 tsp. celery seed

You will need approximately 3 pounds of Chicken Breast Tenderloins.

Coat meat with flour mixture. Pour some oil into a skillet and heat. Brown chicken on both sides. Transfer to a 9x13 baking dish.

Gravy:

In skillet, melt 1/4 cup butter and brown 1/4 cup chopped green onions and 1/2 tsp minced garlic. Add 1/4 cup leftover flour mixture, 2 cups chicken broth, and 1/2 can sliced olives. If you are mushroom lovers-we aren't-you can also add mushrooms at this point. Stir until thickens a little. Pour over chicken. Bake at 350-375 degrees for 1 hour covered.

Having a little man watch you brown the chicken while wearing his Peyton Manning jersey and drinking a chocolate shake is totally optional. It does add a nice touch though!
